    30 Days Paleo: Week One Recap

    I posted last week about eating intentionally, and I’m happy to say so far so good! I’ve been following the meal plans I made up for myself pretty well, and it has made day-to-day life so much easier when I’m lazy and don’t want to think about what to eat. I wrote down meals for breakfast, lunch, and a few dinners (my mom and I take turns cooking), along with cookbooks and page numbers, and then went shopping for everything I would need for those meals.     You’re my cuppycake. And I shall eat you.

    I made cupcakes today. They’re made with fructose, which means I can eat them. The frosting is sugar-free. Tomorrow is a Valentines Day Tea Party with all of my girl cousins, and I decided that instead of making a cake, I’d make cupcakes. Because I’m not sure I’ve ever made cupcakes. I love how they look, but the cupcake itself isn’t exactly how I’d like it to be. They turned out a little bit heavy and dull vs the lighter and moist that I wanted… but with the frosting- which is amazing, by the way- they taste fine.
